Ask yourself these questions and then ask your current coffee supplier:

• Do you declare the grade, origin and composition of the coffee varietals used in your blends?
• Can you stand over the ethics of your coffee purchasing policy?
• After the roast, do you water quench your coffee to cool it for packing? Why would you do this, given that it artificially adds 5% of additional weight and radically increases oxidation and flavour fade?
• Do you handroast your coffee, or do you use a computer chip?
• You're aware that coffee starts to lose flavour just 12-24 hours after the roast - so why don't you show the date and time of roasting on pack?
• Do you bulk-roast high-yield coffee for a mere 4 minutes or less per tonne?
• When you roast, do you use natural convection heat or high-yield radiation?
• Where is your coffee roasted and how far does it have to travel to get to me?

Have a look next time you are out and any two coffee houses, hotels, licensed premises or restaurants and you will find incredible inconsistencies in the way your espresso drinks are prepared.
