Grinding your coffee beans

At Java Republic we believe that the best way you can prepare a coffee is by freshly grinding your beans every time you are making a coffee. When we roast our beans we never compromise on quality and we don’t want you to compromise by using anything but our whole, hand-roasted coffee beans.

For us it’s all about freshness. By grinding your beans when you need them you’re getting a coffee in it’s purest possible form. It may take an extra minute or two and you’ll need one of our handy Hario mill grinders but the end result is worth the extra effort & we know that once you start freshly grinding your beans you’ll never go back to pre-ground coffee.

Now for the science bit:

  • Coffee oils are very delicate and can get contaminated by other odours(like: paper, plastic, carton, e.g.) so when you freshly grind your beans you’re limiting the chance of any outside influences influencing the taste of your coffee
  • As soon as you grind a roasted coffee beans volatile aromas are released and the ground coffee starts to react with oxygen (oxidation). This negatively impacts on the flavour of your coffee. Just 15 minutes after you grind your coffee you lose up to 60% of the aroma of freshly ground coffee.
  • When ground coffee is exposed to moisture in the environment it immediately starts to dilute the coffee oils & changes the coffee you are about to brew.
  • Once ground, coffee starts to degas (after as little as 60 seconds ground coffee can lose as much as 80% of its CO2 content). Carbon dioxide helps extract all of the goodness of oils from ground coffee so you want to trap as much of it in your bean for as long as possible.

Our resident Coffee Development Manager, Vini Arruda, sums it all up in one easy sentence:

“Just grind as much as you need when you need it. Your bag of beans will last longer than a bag of ground coffee.”
