This week we launched our limited-edition, Christmas single origin coffee from Costa Rica. This coffee was carefully selected by our expert team of Roasters and Coffee Quality Consultants. Boasting a SCA score of 92.25, this is the highest graded coffee we have stocked at Java Republic to date. It is also the first time we have an anaerobic processed coffee.  

The flavour profile of this incredible coffee is a real story of two halves in perfect harmony with cinnamon and spices that bring an aromatic bite and quality that sits alongside a sweet, syrup body. Cosy up with notes of Turkish delight, glace cherries, pineapple juice, strawberries and cinnamon. Each sip encapsulates the festive spirit of Christmas and is perfect to enjoy during moments of peace or shared with others during the holiday period.  

Costa Rica La Pastora is produced by Coope Tarrazu, a co-op that was formed in 1960 to represent growers in the Tarrazu region in Costa Rica. La Pastor is the brand name of the distinctive flavour profile of the coffee. This anaerobic processed coffee flowered in April and May, the cherries were picked ripe and quickly pulped before being stored in a fermentation tank for around 4 days. Once fermentation was complete, beans were taken to raised beds and dried under sunlight.
